Everyone’s talking about coconut oil: it’s healthy, tasty, moisturizing. One would think it’s the panacea for nearly everything. And I say it is for making homemade popcorn.
Most recipes I found called for canola oil (boo). After trying olive oil (and failing in smoke), I searched for coconut oil and sure enough, it can be done! And so is born my new delicious, quick, easy snack… or lunch.
1 or 2 tablespoons of coconut oil
1/4 cup corn kernels
toppings of choice: salt, cinnamon, parmesan, za’atar – the sky is the limit!
